Tomato and eggs

Ingredients

  • 4 tomatoes
  • 5 eggs
  • 2 tablespoon olive oil
  • 3 teaspoons tomato sauce
  • 2 pinches black pepper
  • 2 pinches dried coriander
  • 2 pinches salt
  • 1 pinch ginger
  • 1 pinch cumin
  • 1 pinch paprika
  • 20g grated cheese
  • olives for decoration

 

Preparation

  1. Core and peel tomatoes and mix them in the mixer.
  2. In a skillet heat olive oil on medium high heat and add tomato, tomato sauce, coriander, cumin, ginger, paprika, one pinch salt and one pinch black pepper.
  3. Cook for 5 min.
  4. Beat together eggs , one pinch salt and one pinch black pepper.
  5. Add beaten eggs and cook for about 3 min.
  6. Add cheese and decorate with olives.
