Vegetable soup

Ingredients

  • 1 onion, chopped
  • 5 carrots, diced
  • 4 potatoes, cubed
  • 1 tomato with liquid, chopped
  • 1 tablespoon chopped fresh parsley
  • 2 pinches salt
  • 2 pinches pepper
  • 2 pinches cumin
  • 2 pinches paprika
  • 1 pinch curry
  • 1 tablespoon olive oil

 

Preparation

  1. Put all the ingredients in a large pot over a medium high heat and cover with water.
  2. Cover and cook for 45 min or until the vegetables are tender.
  3. Puree in batches in food processor or blender until as coarse or fine as desired.(Add salt if needed)
